Default Rivers Fishing and Cruises

Well I'm a float tube guy. I do alot of of it. While I mostly Fly fish small ponds and protected inlets on the lake near my house I'm feeling the urge to adventure out into different areas.
I live in Kansas City Missouri . I want to do multiple nights on the Missouri River and cruise other rivers in Missouri. I want a Yak that will be the best of both world fish and cruise. I will also be fishing in late fall and early spring here in Missouri where water and air temperatures can be a bit cool.
I see most hard core fishing guys like the sit on top, but do they work well on rivers and small streams? Can I stay dry enough for cold weather fishing? Is there a catch all kayak best of both worlds?
