not sure about kayaking, help please....

I am thinking about buying a kayak, we live in Mobile Al so the areas I would be using it would range from the gulf, bay, rivers and the delta. I would like to be able to fish out of what ever I end up with but mainly want a two seater so I can bring my kids out. I have looked at the ocean kayak company's tandem kayak and they look good. Any suggestions would be greatly appreciated. How hard is it to use a 2 person kayak with only one person if you go alone?
