A Most Epic Trip To Leo Carillo
 

9 of us made a trip up to Leo Carillo State Beach to spend the weekend chilling,
eating, drinking, and if time permitted, fishing.

This place has one of the nicest campgrounds around! Lots of trees for shade,
showers, and a really nice atmosphere.

We had a few cocktails and chilled Friday afternoon.

The time came to get this party started the right way with a massive seafood
boil!

It was one of the most unbelievable meals any of us had ever eaten!
We chilled after dinner and called it a night.

The next day we chowed down on some awesome breakfast burritos that had everything in them. Yum!

We headed down to the beach afterwards to do a little fishing and relaxing.

The Santa Ana winds were kicking pretty good. It made for some tough fishing. On the plus side it was sunny and warm. We stayed on the beach for a couple of hours and headed back to camp for lunch. We had a little bit of everything. Lan made some killer eggrolls! Perry made some abt's that were awesome! Jackie and Bob had some homemade shrimp and scallop cevichie
that was to die for! I whipped up a grilled eggplant with ricotta cheese and balsamic vinegar sandwich. We were so full from lunch that we were concerned we might not be able to eat dinner.

Dinner consited of BBQ tri tip made by Scott and Perry. Steve smoked a ham and we fixed some beans. We also had macaroni and potato salads with garlic bread.

It was a fantastic feast! Everything was excellent! We hung out around the camp fire after dinner trading stories and having a bunch of laughs! That night the Santa Ana's were cranking! Some of the gusts had to be well over
40 mph. I thought my tent was going over a couple of times. Most of us didn't get much sleep that night. In the morning the wind never let up. Trying to pack up a tent with the wind gusting to 35 mph is a real pain. Somehow
Lan and Perry managed to cook a great breakfast under brutal conditions. We
got everything packed up and we split around 9:00 A.M. It was a fantastic trip with some great friends! You guys rock!

We had a great time, thanks for the invite.

Eight coolers full of food and beverages for nine people. Yes it was the "Most Epic Trip to Leo Carillo"! I'm still full.

Holy cow! What a feast! I may just gather the troops and try to make it out in February. I'm going to look into the camping grounds. Thanks for the post. Somebody's going to have to show me how to prepare a clam bake. That looks awesome!

Gotta be somebody there from New England! You had the Cape Cod clambake down pat! Made me nostalgic. I'm promised a full blown clambake next time I bring my family backto Massachusetts. My cousin's hubby Cazi's gonna do the honors! seeing your bash just made me think about headin east this summer! We do it in a barrel with alternate layers of rockweed and hot rocks about halfway up, then new potatoes, clams, lobsters, fish, Portuguese linguica sausage, corn on the cob, etc. Then the barrel is closed with a canvas which is tied onto it. The whole thing steams while everyone parties for an hour or two. Looks like you guys nailed it down! Great party! :brews

Nine of us went to one of our favorite spots, and we had a great time. All I can say is "WOW"!

I think we can squeeze a small Prime Rib on Perry's Weber .The other idea is Baby Back Ribs. I have a recipe that is killer. We could get the Prime Rib on Steve's smoker and cook it slow all afternoon. I still have to see if we can get a group discount at a local detox ward. Ha Ha . Scott Shaw

It was a pleasure lighting up the Que once again. We can definitely cook up a Prime Rib on my 'Q on the next trip. It would work like a larger version of Steves. I'm going to put a temp gauge in it, then we would just use an indirect method of cooking like we did with the Tri-Tip. I'm going to change the grill if a newer one with gull wings will fit inside so we don't have to remove the grill to add charcoal or wood. Toss in some soaked wood chunks and we would be good to go :thumbup . Of course, if you really wanted to we could toss in a few racks of ribs instead :)
